Breakfast TACO?

ABQ and Santa Fe are full of fabulous restaurants. However, the one thing missing from the menus...brace yourselves...BREAKFAST TACOS! They are no where to be found in this town. Yes, I'm serious. I have asked chefs, restauranteurs and plenty of locals and they have no idea what a breakfast taco is! Around here it is replaced with the "breakfast burrito", usually a monstrous tortilla filled with egg, hash browns, cheese, maybe a protein, and swimming in chile sauce. When eating a breakfast burrito, you must take caution, either think about splitting it or prepare to bust a gut! So, for ya'll in Texas, do not take your breakfast tacos for granted.
